Happy Tasty Tuesday! Today we are highlighting these super easy and delicious Beef Burrito Bowls using cauliflower rice! If you are craving Mexican food but still want to stay on the healthier side of things, this is a must-try for you! Full recipe and instructions are below!

Beef Burrito Bowl With Cauliflower Rice!

Corporate 

Ingredients:

• 1 lb Lean Ground Beef

• Cauliflower Rice 

• 1/2 Red Onion (Chopped)

• 1 Red Bell Pepper 

• 1 Yellow Bell Pepper

• 1 Avocado

• Pico de Gallo Salsa

• Fat Free Cheese

• Light Sour Cream

• 1 Can Black Beans

• 1 Can Sweet Corn

Instructions:

1) Brown lean ground beef in a medium skillet

2) Sauté onions and bell pepper until tender

3) Add in corn and black beans and simmer for 5 minutes

4) Layer of burrito bowl with your cooked cauliflower rice, ground beef, and vegetable mixture. Top with salsa, sliced avocado, fat free cheese, and light sour cream!
