Chickpea "Chicken" Salad

Our chickpea “chicken” salad is a must-try in our Hometown Pharmacy  recipe book. It is SUPER easy, healthy, and great tasting while offering so many creative ways to serve it. We love it many different ways, but our favorite is just putting a scoop of it in between two pieces of delicious whole grain bread for a tasty and fresh sandwich! Recipe and step by step instructions are below!

This recipe was taken directly out of our brand new Hometown Pharmacy Cookbooks that are on sale at a Hometown Pharmacy near you. $5 from each sale will go to Feeding America, which is a great organization helping reduce the hunger problem in Wisconsin and across the country. 

Recipe Instructions:

Step 1: Add canned chickpeas or garbanzo beans into a large bowl, wash them, and then mash with a fork or potato masher into a consistency that you desire.


Step 2: Add all remaining ingredients to the mashed mixture.


Step 3: Mix Ingredients.


Step 4: Serve on whole grain bread, crackers, or on top of your favorite greens!
